I emailed the Macau Tourist Borad to be absolutely sure that we were not missing a public way for G&T to get directly to the airport, and this is their reply:

So having ruled that out, I think the Boingo's match to the Casino helicopter tells us that the helicopter was in fact the way that G&T managed to get to the airport in a timely way.
Did the teams PitStop at the Casino? How did they manage this? A lucky contact? A fan? It will be so much fun to see. :jumpy:

Peach, technically there are differences between hydoroils and Tubo-Jets. However, sometimes ferry builders incorporate parts of both. Such as in Hong Kong/Macau, where the "turbo-jets" going from Macau to Hong Kong airport look like this:
Hong Kong Area Turbo-Jet fleet
To me, that looks a lot like a hydrofoil even though it technically isn't.
