A video from near the top. I doubt (even with binoculars) they could play spot-the-clue; they probably just go up and grab an info card.
An unofficial site here with lots of photos, video links, etc. Comparing the site's map with this photo, I'm guessing the horse is between The Address and the Dubai Mall (if the horse even figures in this episode).

The source confirmed this as being the correct horse

The sign up sheet is likely for one of the driving tasks. I would guess it is for the desert (vs. race car) driving as this seems to be for both team members.
