Tana Ramsay, Wife Of Noted Chef Gordon, Has A Cooking Style All Her Own



Tana Ramsay couldn't be more different from her husband, world famous chef Gordon Ramsay.

For one thing, unlike the notoriously foul-mouthed Hell's Kitchen host, Tana doesn't drop a single curse word in her interview with CityNews.ca. For another, though she's a published cook in her own right she freely admits it takes her forever to chop an onion.

That's why the recipes found in Ms. Ramsay's third cookbook, Home Made, are relatively simple, targeted at families who have to get food on the table with little time to spare.

"I've never been trained as a chef. I take forever to chop an onion or a carrot compared to (Gordon) but it's my way of real family food," Ramsay outlines in a sit-down chat at the Park Hyatt in Toronto. "Our dishes are completely different, and it's the home cooking he wants when he's at home."

And when the Ramsays are at home with their four children, 11-year-old Megan, 9-year-old twins Jack and Holly, and 7-year-old Matilda, it's Tana who does most of the cooking. She explains that while feeding the family healthy meals seven days a week is challenging, a little planning makes a world of difference.

"Buy your fruit and veg totally unprepared, that's the cheapest way to cook for your family," Ramsay notes. "Planning ahead, not wasting any food, and turning dishes around so your leftovers become part of your next day meal."

With Gordon away shooting his television shows, among them Kitchen Nightmares and The F Word, the kids are now helping out more in the kitchen, something Tana feels is important.

"Megan's begun to take on some of the responsibility of helping prepare the evening meal. Not so much with baking at my elbow, as kids like to bake cookies and that, but more actually helping and beginning to take more of an interest in preparing a simple meal," she says. "Which is great, because then I can pass on some of the responsibilities to her which I think is important at that age to learn, so that when she leaves home in, gosh, probably not so many years, that she has a really good basic knowledge of how to cook for herself on a budget and healthily."

Healthy comfort food is at the heart of Home Made, with recipes such as Rosemary-Infused Monkfish, Cinnamon Beef Stew, and Sweet Potato And Carrot Soup With Thyme Chili Oil. For Ramsay the decision to take up cooking was one of necessity when she and Gordon started a family - she wanted to ensure her kids were eating nutritiously, a lesson learned from when she was a child.

"I remember going home and having a home-cooked meal on the table - just the comfort that gave me as a child and the security it makes you feel. That's what I want to do for my family," Ramsay explains.

The Ramsay kids all have their favourite dishes - Tilly likes soup, Megan's into Thai food, Holly devours salmon and prawns, and Jack likes it all - so it's inevitable they're not all going to agree on what's on the menu any given day. But the busy mother-of-four says she's firm with them if they're picky, and advises parents of choosy eaters not to give up.

"They all go through a stage when they're really quite picky. You've really got to stand quite strong," she says. "My kids were very close together so I didn't have time to fuss around, and if they didn't want it, didn't like it, well there was nothing else. I knew they'd end up eating it and then they don't bother to be fussy again.  But I think every child goes through a stage where mealtime can be a bit of a battlefield. You've got to persevere. "

One of the popular meals in the Ramsay household is Bobotie, included in Home Made (find the recipe below). It's a South African dish Tana's brother-in-law Jonty introduced her to.

"It's actually a very simple quick dish. It's lamb mince, slightly curried, and it's got flaked almonds, apricots, sultanas, mango chutney in there," she outlines. "It's almost like a really light shepherd's pie because the top is egg and milk and it sets like a custard. It's really light and so delicious."

Along with promoting her new book, Tana's getting ready for Christmas with the family, which she says will be a modest affair this year.

"Just the six of us, we tend to scale it right back now because all of our siblings have their own kids and it's just really nice to enjoy Christmas with our own kids and actually get a chance to realize it's Christmas Day instead of entertaining all the time," she explains. "Low key, lots of fun, lots of food, lots of drink, a beautiful Christmas tree, and lots of Christmas carols, I'm obsessed with Christmas carols. I play them all day on Christmas Eve, Christmas Day, and Boxing Day."

Home Made is now available in book stores and online.

Gordon Ramsay's wife dismisses Dubai move rumours



TORONTO -- Celebrity chef Gordon Ramsay and his family won't be moving to Dubai, despite media reports to the contrary, his wife told CTV.ca on Wednesday.

British and Australian media had recently reported that the bad boy chef and TV personality, known as much for his colourful language as his lineup of Michelin stars, is planning to leave London for Dubai.

"I did read that and I phoned Gordon and I asked, 'Are we moving to Dubai?'" recounted his down-to-earth wife Tana Ramsay, who is in Toronto on a promotional stop for her new cookbook Home Made.

"Where that came from, I don't know," she said.

It would be too difficult to uproot the family at this junction in their lives, said the hands-on mother of four, who is a trained Montessori teacher.

"Our eldest is just sitting exams for entry to secondary schools so there's no way we'd put her through that and then move," she said, noting that many of Gordon Ramsay's restaurants are located in London.

She added, "My work is in London, so we're not moving anywhere."

Her role as a domestic cook has also developed into a career, as the author of best-selling cookbooks aimed at helping time-pressed parents get food on the table.

Gordon and Tana Ramsay and their four children, Megan, Jack, Holly and Matilda, currently live in Wandsworth, south London.

The multi-Michelin starred chef's first restaurant outside the U.K. was Verre, the Hilton Dubai Creek's signature restaurant, he said recently in a statement.

"There is a real buzz about Dubai, and I am proud to be a part of it. In my mind, Dubai is one of the most vibrant cities around."

Ramsay's latest venture, Maze restaurant, is to open in Australia at Melbourne's Crown Casino in 2010.

Tana Ramsay and I have one thing in common: We have both cooked for her husband. That would be Gordon Ramsay, the British celebrity chef.

I burned his toast. She giggles and admits she has done the same.

She has had much more opportunity, mind you. After all, while Gordon Ramsay is off filming his myriad television shows and maintaining his Michelin stars (12 and counting), Tana, 34, mans the stove at home. She even cooks Saturday dinner, the one meal that all four children and her husband try not to miss.

During the week, Ramsay will cook "one-pot" meals like those featured in her new cookbook, Home Made ($39.95 HarperCollins), such as Lemon Chicken Stew and a South African dish called Bobotie, which she describes as lighter version of shepherd's pie.

She also wears the pants, admitting she's the disciplinarian and Gordon, 42, is the good guy. When she phoned home yesterday morning, dad had allowed two of the kids to sleep in their bed, an obvious no-no.

When mummy is home, the rules for Megan, 10, twins Jack and Holly, 8, and Matilda, 6, are strict: No TV from Monday to Friday, homework done as soon as they are home from school, clothes and school supplies laid out the night before and no dessert – only fruit – on weekdays.

Table manners are paramount, and the soft-spoken Ramsay recites them they way only a mother who has said them out loud 100 times or more can: "No leaving the table while other people are eating; use utensils, not fingers; sit up straight," she says.

Speaking of manners, Gordon does not swear when he is home. The children have no idea their father's alter ego is a foul-mouthed bully who can reduce a chef trainee to tears, since they've never seen The F Word, or Hell's Kitchen or Kitchen Nightmares.

"When they're old enough, we'll deal with it then," she says matter-of-factly.

The former Montessori teacher taught herself to cook when her eldest daughter, Megan, started solid foods. The role of domestic cook has been parlayed into a new career, that of cookbook author and cooking-show host, despite her lack of formal training. Well, if you don't count the intrusions by her husband, who has had the temerity to ask if she should turn up the heat on one of the burners when she was making dinner.There's a friendly rivalry there, even though she admits to stealing some of his dishes, most recently a salmon en croute (in pastry) from Gordon's new British TV show, Cookalong Live. She relates how Gordon decided to make a Moroccan chicken of hers, blending some of the ingredients rather than leaving them chunky. The children preferred her version.

"He's got to be careful. The little critics at home are watching," she jokes.

Ramsay started working again when Tilly, their youngest, started school last year, but if her husband has any say in the matter, he would like to derail that plan with another baby.

"Never say never," Tana laughs, but adds that to have a baby now, when her youngest is 6, would be hard.

Besides, the Ramsays have always talked openly about their fertility problems, Gordon with his low sperm count and Tana with polycystic ovaries. Their first three children were conceived with the help of in vitro fertilization, though Tilly – "a real surprise" – was conceived naturally.

Ramsay has "a couple" of TV shows in development that revolve around "cooking and lifestyle," which she describes as "family management, the juggling act of work and home and having four children."

The prize this year on 'Hell's Kitchen' is a head chef position at Borgata



When Fox TV's hit cooking series "Hell's Kitchen" gears up in January, its contestants will be vying for a head chef position inside the trendy Borgata Hotel Casino in Atlantic City.

As with prior seasons of the unscripted reality series, the competing chefs have varying degrees of culinary experience. Each week, the frazzled chefs try to slice and dice their way to the top, as they vie for Chef Gordon Ramsay's approval. Demanding nothing but absolute perfection, Ramsay puts the chefs through rigorous culinary challenges as they are split into two teams - the Red Team and the Blue Team.

By the end of each show, Ramsay (in various degrees of screaming) will send one chef home with the rest left to saute' their way toward the grand prize.

As for any local entrants, the press materials tell us that "Ji, 33, is a private caterer from Palisades Park."

Since opening in 2003, Borgata has raised the culinary bar in Atlantic City introducing world-class dining experiences to the city. The hotel boasts eateries by such star chefs as Bobby Flay, Wolfgang Puck, Michael Schulson and Michael Mina.

"Hell's Kitchen" airs Thursday nights at 9 p.m. on Fox starting Jan. 29.

I do not visit Atlantic City, but I do read the newspaper which covers virtually all of New Jersey including Atlantic City. There are occasional articles about the casinos, as gaming is an important revenue source for the state of New Jersey. The Borgata is I believe the newest and most posh/swank casino in Atlantic City. A senior position there, even if it is not the top one and we know from Hell's Kitchen 4 that it won't be, is an important job in the culinary world(just as it was for the Green Valley Ranch Resort where I remember that Roc went).

When Chef Ji-Hyun Cha signed up to compete in the upcoming season of Hell's Kitchen (premiering Jan. 29, on Fox), she was ready for anything. Or so she thought.

"I didn't go into it thinking I was joining the Brownies," she jokes. "I was marching into battle, and I was ready to do pretty much whatever I had to not to become one of the casualties."
