How is it known that the other team gave it to them for them to hold? The episode hasn't aired yet.

Regarding that scene in the preview, Jessica said on twitter to watch the episode before jumping to conclusions about what happened. I also want to add that the previews for episode 2 showed what many presumed to be Joey getting hurt on the ladder (which didn't happen), so you can't really always go 100% off of what the preview shows.

Jessica said she's not gonna tell Brittany that she forgot her gnome, not about anything being taken. Then there's a jump cut to Brittany saying, "Jessica has my gnome." Those scenes in the preview look spliced and edited for drama like the focus on how the flags dropping from the top of the ladder would be consequential when it wasn't and how they added some weird crunching sound effect when Joey was struggling on the ladder to lead us to believe he suffered an injury when he didn't.

It's nice to see that those blue wall thingies (see second pic in Peach's post #7) were actually part of the race (see press pic #11).
