We are also due eight episodes (which is great considering how the UK one is so tight with only 6 and has way less teams while this has more!)
Episode One is a TWO HOUR premiere (which could also be changed because it would mean 10 PM - 12 AM :escape) on Sunday while Episodes Two-Three will both air on the following Wednesday, and then its all just Wednesdays from there.

Not quite.
From CBS:
Premieres Sunday, Jan. 22, 2017 (10:00-11:00 PM, ET/7:00-8:00 PM, PT – time is approximate after post-game coverage of the AFC Championship game) on the CBS Television Network.
The series moves to Wednesdays on Jan. 25, 2017, with a special two-hour episode, 8:00-10:00 PM, ET/PT. In subsequent weeks, it will air 8:00-9:00 PM, ET/PT.
