"The Gloriette" is the gate/portico (similar to the Brandenburg Gate in Berlin) on the hill about a mile from the actual palace. It does have a café in it.

The maze is about halfway from the palace to the Gloriette. It is near the Neptune fountain.

It appears that the Pit Stop is in front of the Gloriette, according to this photo.
From the screen caps, it appears the confessionals are at the end of the Gloriette. (from ZouLy)
From personal experience, that will not be a fun climb in race mode with a backpack.
There are of lots of palaces in Vienna. Possibilities at Schoenbrunn Palace for the chandelier and waltzing are the Hall of Mirrors and Grand Gallery. They both have historical significance. Someone with better eyes than me can try to do the match up.

Wiener Sängerknaben is the Vienna Boy's Choir, so Tim/Marie finish before Jason/Amy in the task, and that's where the taxi theft takes place.

To go along with the Cab stealing drama that was in the preview... Jason called Marie a "Cab Klepto" on twitter. That has to be related to this upcoming episode :funny:
