Those racks are the riddling racks where the bottles are stored during aging. They turn each bottle a quarter turn each week or so to get the yeast sediment to settle into the neck of the bottles. Later they will freeze the neck of the bottle, remove the cork and let the internal pressure force the frozen champagne with the sediment out of the bottle and quickly reseal it. It makes for clear and uncloudy champagne. It might have been a fun and messy roadblock to have the teams try to do that process, but I imagine any bottles they did would have been ruined (or at least unsuitable for selling), so perhaps the company didn't want to do it unless WRP paid a few thousand dollars for the wasted bottles.
Notice that those bottles are unlabeled. They probably have some distinguishing chalk mark they are looking for. The search should be a challenge because as you can see in the background, there are many, many racks like the one he is looking at.

Sorry, I got my French cities mixed up. Joan de Arc was tried and executed in Rouen not Reims. Who can tell one French city from another? Especially in medieval times.
