Could the detour be:

 - Construct: Make a snowman
 - Construction: (at Burj Dubai) Do something

Roadblock:

 - Desert walk and collect/deliver things (the bag that Brian has isn't his  :lol:)

Fast Forward/Miscellaneous Task:

 - Race a car around track in a certain amount of time

If there was a Fast Forward I would imagine either Mika and Canaan (We might get eliminated) OR Megan and Cheyne (We are ahead so lets get more ahead) going for it.

Can't be:

 - Brian and Erika (Seen at two tasks)
 - Sam and Dan (Seen at detour)

Snooky:
If you do not know already the sliding task is at the indoor ski resort is in Mall of the Emirates. That is where ski Dubai is if people were unsure. But why are they sliding on their butts?
