Also, maybe having a "one-leg" race during which the 11 teams just have to go through 11-12 countries, without any pit stops and knowing their position on the race.

OR

Having a race in one continent like teams would have to through like across Europe by car.

Like in Pekin Express (French), there could a season where the contestants have to ask locals for rides and a room to sleep in.
