J. Maxwell of Clifton Park, who was the general manager of the Hollywood Brown Derby in Albany until the beginning of November, is one of the contestants on "Hell's Kitchen." The Fox reality series subjects chefs to the foul-mouthed tirades and abuses of British culinary tyrant Gordon Ramsay as they compete for a six-figure job at one of Ramsay's restaurants.

Maxwell's bio on the "Hell's Kitchen" Web site refers to him as a food-court chef, a reference to when he worked for Price Chopper (pre-Brown Derby) and occasionally had to fry chicken. Maxwell's bio on the site is as follows:

"J fries chicken in a food court and is furious about it. Claiming to be held down by corporations, he dreams of opening his own restaurant where his talent will be appreciated. His dream restaurant would be modeled after Japanese culture because he believes they are appreciative and humble, something J may need to learn. He believes that he is never wrong in the kitchen. For him, being a chef is more than just cooking, it is everything. This anal retentive clean freak anticipates his passion and talent will pay dividends in Hell's Kitchen."

Maxwell confirmed that he's on the series, which he said has already finished taping. Maxwell said he is precluded by a confidentiality agreement from revealing anything else about "Hell's Kitchen." The series premieres Jan. 29 on Fox.

Me either! I don't think I've ever been so prepared before the show begins.

BTW, I see that Chef Virginia Dalbeck-Armenta has located her new grill in San Angelo, which is not that bad a drive from Austin. Perhaps I'll have the opportunity to visit her new restaurant one of these days. If I do, I'll take lots of photos!

Veltri's inferno? New Smyrna chef takes on Gordon Ramsay

New Smyrna Beach chef Danny Veltri is using seven words he never thought would come out of his mouth: "You'll have to talk to my publicist."

"Everytime I say it, it sounds strange," says the executive chef at Flip Flops Grill & Chill at 103 S. Pine Street, just off New Smyrna's Flagler Avenue. But since he jumped into the fire of Fox's Hell's Kitchen, Veltri, 24, is happily getting used to it.

Contract agreements keep him from revealing details of his experiences with uber-chef Gordon Ramsay and the other 15 contestants while competing for a grand prize of a head chef position at the Borgata Hotel Casino & Spa in Atlantic City, N.J. But Veltri did tell me he plans to make the most of the exposure to boost his career.

"From what I can tell, not everyone has used the experience to springboard their careers," this Sarasota native says confidently.

In fact, his assured tone made me think Veltri held his own with the take-no-prisoners Ramsay. If you read Veltri's bio on the Fox Web site, you learn this avid outdoorsman, who graduated from the Sarasota County Technical Institute, is focused on his profession.

I recently ate at Flip Flops, and while the restaurant name may sound like just another sandy beachside eatery, it is anything but. With appetizers such as eggplant caprese and fresh fish crowned with salsas and sauces layered with bold flavors, this little restaurant is quickly making a name for itself. I was pleasantly surprised and look forward to returning there soon.

For those who have managed to dodge the reality-show bandwagon (and on some level, I salute you for doing so), Hell's Kitchen follows participants' efforts to get the attention of the explosive, caustic Ramsay in hopes of landing a culinary dream job.

Bravo's Top Chef can be grueling, but criticism on that show is largely constructive.

I'd wager the devil himself would cower at one of Ramsay's core-stripping, mind-melding tirades. Wait a minute. The devil and Ramsay have never photographed together. Hmmmm.

So how does Veltri fare in the competition?

He knows, but he's under contract and can't spill that pot of beans. When asked, it gives him another chance to tell a reporter: "You'll have to talk to my publicist." And that's not a bad way to start a young career.

Even Veltri hasn't see the final edit. He'll see how he's portrayed along with all of us when season five premieres at 9 p.m. on Jan. 29.

Peerless chef visits ‘Hell’s Kitchen’

Knoxville resident and Peerless Restaurant executive chef Carol Scott will appear on the upcoming season of Fox’s “Hell’s Kitchen,” which will premier Jan. 29.

This season, Scott and 15 other chefs will compete to win world-renowned chef Gordon Ramsay’s approval and a spot as the executive chef at Borgata Hotel Casino and Spa in Atlantic City.

“It was the craziest experience of my life,” Scott said.

“I was pushing myself to my utmost limits, that I didn’t even know I had.

“It was a huge learning experience. There was so much I learned there that I never, ever could learn anywhere else,” she added.

Scott created a video audition at Edison Park, where she was a chef and kitchen manager, before the restaurant closed in 2007; then drove to Fort Lauderdale for an on-camera interview.

 
She then flew to Los Angeles for final interviews and testing.

“I never actually expected to get on,” Scott said.

“My intention was just to look up information on Gordon Ramsay and go to New York and … work for free. I just wanted the experience of working with him,” she added.

“I wasn’t expecting to be on a reality show.”

While Scott could not reveal any details about the show, she did say the premier involved each chef cooking a “signature dish.”

Scott plans to include Knoxville residents in her experiences on Hell’s Kitchen by leading cooking classes at Glass Bazaar and having viewing parties at Peerless.

The show airs from 9 to 10 p.m., Thursday nights, during which Peerless will hold viewing parties in the bar, or if the crowd is big enough, the ballroom.

Scott will prepare food from the show for attendees, beginning with her signature dish on premier night.

“Before the show airs, I’ll be doing entrée specials based on stuff I had done there on Hell’s Kitchen … I’ll also be doing appetizer specials and fun drink specials during the airing of the show,” Scott said.

“I’m going to take what I learned on Hell’s Kitchen, and the food I made there, either my own food or Gordon Ramsay’s, and make it here throughout the season.

“I’m really excited about that,” she added.

“I think it’s going to be so much fun.”

Cooking classes at Glass Bazaar, 6470 Kingston Pike, are limited to 20 people and prices depend on instructor, content and food cost. For more

Scott, a Las Vegas, Nev., native, attended culinary school at Le Cordon Bleu and was first employed by Food Network star Bobby Flay at Mesa Grille.

She has been a chef at Peerless, Edison Park and The Orangery in Knoxville, where she moved to provide a more “wholesome environment” for her two children.

Heat's on again in 'Hell's Kitchen'

Gordon Ramsay is perfectly comfortable having a friendly conversation.

He is a thorough gentleman. Just once, however, you wish he would lose his cool and scream that you're a donkey.

It was during the second season of "Hell's Kitchen" that the famously foul-mouthed chef used the D-word as an insult. Now, as the show launches its fifth season, 42-year-old Ramsay is stuck with a catchphrase.

That's the thing about Ramsay's TV fame: Viewers love to watch him scream, shout and kick things. It kind of puzzles the chef.

"I was doing a book-signing in London, and this man comes up with his children and asks me to write 'Merry Christmas and (expletive) off,' " he says, sounding perplexed. "I can't write that in a book! And he stands in line with his children to ask me this?"

On the other hand, the chefs aspiring to win "Hell's Kitchen" seem to cower in fear at the thought of Ramsay hurling an insult their way. It is part of what makes the show so dynamic: You never know when he is going to blow.

"It's highly emotional and claustrophobic," he says. "To be honest, the closer you get to them, the bigger you can kick their" rear.

And he promises to kick plenty of rear during the new season. It's not merely for the cameras. The winner gets a high-profile job as head chef at the Borgata Hotel Casino & Spa in Atlantic City.

"When I start to see people crack, that's nowhere near the pressure of running your own business, managing a large staff, paying a mortgage, etc," he says. "If you want to aspire to be a great chef, there's a price to pay for that."

Ramsay knows that first-hand. He operates more than 20 restaurants. His books are regular bestsellers.

He knows how to loosen his culinary guard, though.

"I have a craving for In-N-Out burgers," he confesses.
