Once in a while, Joe shares cooking tips and recipes with the houseguests that sound pretty darn good, so I thought I'd post a couple of the best.
RUSTIC 1830's' ROASTED CARROTS
Traditional carrots roasted in a Dutch oven.
In a Dutch oven, add balsamic vinegar and honey, heat and add carrots. Roast in oven (probably 350 degrees) for 1/2 hour. Add chopped fresh basil and a can of diced tomatoes. Roast another 1/2 hour in oven.
Joe's secrets to the perfect pan fried cod!
Add a little bit of olive oil to a hot pan. Make sure pan is hot before adding cod filets. Brown the cod until lightly crispy no longer than 4 minutes. During browning, add smoked paprika, salt, pepper. When cod is done browning, add lemon and cook down a bit. Then top the cod with butter and let it melt into the pan. When the butter has just finished melting, the cod is done.
