The answer is going to be opinionated:

What if Mark refused to race with Mallory on TAR24, and Bopper & Mark backed out instead, leaving only 10 teams to race?

My opinion, the season is already horrible, but with 10 teams only, it will be one step worse.

There was an alternate team available. It would have been awesome.

They would have gone farther than 2 legs, I'm sure of it. Bopper was the driving force of the team in their first race, Mark's heart just wasn't in it without him.

They would probably still be eliminated at the end of the leg. Both Detour options in Johannesburg required physical stamina (transporting 125 kg fish or dancing) and Claire seemed unprepared to face the race at that matter.
